  1. Stir rice and 2 cups water in a medium saucepan; heat to a boil over medium-high. Reduce heat to medium-low; cover. Cook 35 minutes or until all water is absorbed. Stir in almond milk, maple syrup, vanilla and cinnamon; cover. Cook 30 minutes more or until mixture is thick and creamy, stirring frequently.
  2. Stir banana, pineapple and pistachios in a small bowl.
  3. Divide 1/2 cup banana mixture among 6 small bowls; top with rice mixture and remaining 1/2 cup banana mixture. Serve drizzled with additional maple syrup, if desired. Makes 6 servings.
