Autumncrisp Green Grape and Cuties Mandarin Orange Ricotta Bruschetta

Ingredients
- 1 baguette (12 oz.) cut into 1/2-inch-thick slices
- 2 Tbsp extra-virgin olive oil, divided
- 1 large shallot, minced
- 2 cups Sun Pacific green grapes, coarsely chopped
- 6 Sun Pacific mandarin oranges, peeled, separated and coarsely chopped
- 1 1/4 cups part-skim ricotta cheese
- Sea salt and black pepper to taste
Instructions
- Heat oven to 400*F.
- Lightly brush one side of the bread slices with 1 Tbsp oil.
- Place on a sheet pan with oil side facing up.
- Toast bread in the oven for 10 minutes, or until golden brown.
- Remove from oven and allow to cool.
- In a small skillet, add remaining 1 Tbsp oil and the shallots.
- Saute' for a few minutes, or until golden brown.
- Add shallots to a bowl with grapes and oranges and gently mix.
- Spread cheese on toast slices; top each evenly with fruit-shallot mixture.
- Season with salt and pepper to taste.
