Avocado Rancho Chopped Kit with Chicken Skewers

Ingredients
- 8 Bamboo Skewers
- 4 boneless, skinless chicken breasts (approximately 2lb.), cut into 1" cubes
- 1/3 cup olive oil
- 1 tsp each ground cumin & chili powder
- Salt and pepper to taste
- 1 (22.6 oz) package Taylor Farms Organic Avocado Ranch Chopped Kit
- 1/2 cup chopped cilantro
Instructions
- Soak skewers in water for 20 to 30 minutes. Thread 4 or 5 chicken pieces onto each skewer. Whisk together oil, cumin, chili powder and salt and pepper; brush mixture onto chicken.
- Heat a grill or heavy-bottomed pan over medium-high heat. Grill chicken about 5 minutes per side until chicken has char marks and is cooked through (recommended internal temperature is 165* F).
- Garnish chicken with cilantro.
- In a large bowl, toss all chopped salad kit components with half of the dressing. Serve chicken skewers with the salad.
- Use the remainder of the dressing for dipping.
- Makes 4 servings.
