  1. Soak skewers in water for 20 to 30 minutes. Thread 4 or 5 chicken pieces onto each skewer. Whisk together oil, cumin, chili powder and salt and pepper; brush mixture onto chicken.
  2. Heat a grill or heavy-bottomed pan over medium-high heat. Grill chicken about 5 minutes per side until chicken has char marks and is cooked through (recommended internal temperature is 165* F).
  3. Garnish chicken with cilantro.
  4. In a large bowl, toss all chopped salad kit components with half of the dressing. Serve chicken skewers with the salad.
  5. Use the remainder of the dressing for dipping.
  6. Makes 4 servings.
