Berry-Swirl Cheesecake

Ingredients
- 1/2 c raspberries
- 2 T seedless raspberry jam
- 9 graham crackers sheets, crushed
- 2 T packed brown sugar
- 4 T butter, melted
- 4 pkgs. (8oz. each) Cream cheese
- 1 pkg (14oz.) firm tofu, drained
- 1 1/3 c granulated sugar
- 1/2 c egg substitute
- 2 T flour
- 1 t vanilla extract
- 1 lemon, zested and juiced
Instructions
- Heat oven to 350 degrees. Grease 8" springform pan; wrap outside in foil. In pot over medium heat, cook berries and jam 5 minutes, mashing gently. Cook 2 minutes or until reduced to 1/3 cup.
- In processor, pulse next 3 ingredients until fine crumbs form; press into pan. Bake 5 minutes or until golden.
- In processor, puree cheese, tofu and granulated sugar 1 minute. Add next 3 ingredients, 1 1/2 t. lemon juice and 1/2 t. lemon zest. Process 30 seconds, pour over crust.
- Spoon berry mixture over batter. Using skewer, gently swirl. Cover pan with foil. Bake 50 minutes or until done. Let cool. Garnish as desired.
