Cajun Pork Chops with Aioli

Ingredients
- 1 Tbsp avocado oil or other light-tasting oil
- 4 (8-ounce) bone-in pork chops
- 1 Tbsp Cajun Seasoning
- 1/2 cup sugar-free mayonnaise
- 1 Tbsp chopped fresh parsley
- 1 tsp lemon juice
- 1/2 tsp minced garlic
Instructions
- Heat the oil in a large skillet over medium heat for 2 minutes, or until shimmering. Season the pork chops on both sides with Cajun seasoning.
- Place the chops in the hot oil and cook for about 6 minutes per side for medium doneness, or longer if you want them well-done. (When medium-done, a meat thermometer will read 160*f when inserted in the middle of a chop.) Remove from the pan and let rest for 5 minutes.
- Meanwhile, make the aioli: Place the mayonnaise, parsley, lemon juice, and garlic in a small bowl and mix well.
- Serve the pork chops with the aioli.
