  1. Heat the oil in a large skillet over medium heat for 2 minutes, or until shimmering. Season the pork chops on both sides with Cajun seasoning.
  2. Place the chops in the hot oil and cook for about 6 minutes per side for medium doneness, or longer if you want them well-done. (When medium-done, a meat thermometer will read 160*f when inserted in the middle of a chop.) Remove from the pan and let rest for 5 minutes.
  3. Meanwhile, make the aioli: Place the mayonnaise, parsley, lemon juice, and garlic in a small bowl and mix well.
  4. Serve the pork chops with the aioli.
