  1. Place peels i a large bowl and pour about 2 cups boiling water over the peels. Scrub the peel skins to remove any wax. Rinse peels with cool water; pat dry. Slice each peel into 1/4-inch-wide strips.
  2. Place peels in a medium saucepan filled with enough water to cover the peels; bring to a boil over high heat. Simmer for 5 minutes; strain. Repeat this step two more times. On the last round, let the peels simmer, covered, in the water for 30 minutes on low.
  3. Strain the peels, reserving the water. Add about 1 1/2 cups of sugar, water and peels to the pot. Simmer for 30 to 40 minutes, without stirring, until peels are translucent and tender. Turn off the heat and allow the peels to cool.
  4. Preheat oven to 200*F.
  5. Place a wire rack on a parchment-lined baking sheet; arrange peels on rack. Avoid having them touch each other.
  6. Bake for 45 to 60 minutes or until dry. Immediately toss dried peels with sugar; cool completely on rack.
  7. Makes 2 cups or 8 servings.
