Cheesy Spinach-Artichoke Dip

Ingredients
- 1 box (10oz.) frozen chopped spinach, thawed and drained
- 1 can (14.5oz.) artichoke hearts in water, drained
- 1/4 c chopped scallions
- 1 clove garlic
- 3/4 c low-fat mayonanaise
- 1/2 c low-fat sour cream
- 1/2 c grated mozzarella cheese, divided
- 1/4 c grated Romano cheese
- 3 cups sliced assorted vegetables (celery, cucumbers and/or bell peppers)
Instructions
- heat over to 375 degrees. In food processor, pulse chopped spinach, artichoke hearts, scallions and garlic 6 times or until coarsely chopped.
- Add mayonnaise, sour cream, 1/4 c mozzarella and Romano cheese. Pulse 4 times or until combined; spoon into greased 3 cup oven-safe dish.
- Sprinkle dip with 1/4 c mozzarella cheese. Bake 8 minutes or until heated through. Serve with sliced vegetables.
