Chicken Enchiladas with Green Chili Sour Cream Sauce

Ingredients
- 10 Soft Taco Shells
- 2 cups Shredded Chicken (cooked)
- 2 cups Monterey Jack Cheese
- 3 tbsp Butter
- 3 tbsp Flour
- 2 cups Chicken Broth
- 1 cup Sour Cream
- 1 can (4oz) Diced Green Chilies
Instructions
- Preheat Oven to 350
- Grease a 9x13 Pan
- In a Bowl, Mix Chicken and 1 Cup of Cheese
- Roll up Chicken/Cheese mix into Tortillas and place into Pan
- In a Sauce Pan, melt butter, stir in flour and cook for 1 minute
- Add Broth and whisk until smooth
- Heat over medium heat until thick and bubbly
- Stir in sour cream and chilies. Do NOT bring to Boil to avoid curdling
- Pour mixture over enchiladas
- Top with 1 Cup of Cheese
- Bake for 22 Minutes
- Broil for 3 Minutes to Brown Cheese
