Ingredients
- 1 Tbsp coconut oil
- 1 pound ground chicken
- 1/2 cup thinly sliced red onions, plus more for garnish, if desired
- 1 Tbsp peeled and minced fresh ginger
- 1 tsp minced garlic
- 1/2 tsp red pepper flakes
- 1 Tbsp Worcestershire sauce
- 1 Tbsp wheat-free soy sauce
- 1 tsp Sriracha sauce, plus more for serving, if desired
- 1 Tbsp lime juice
- Leaves from 1 large head or 2 small heads butter and/or leaf lettuce
- 2 cups basic Cauliflower Rice, hot
- 2 Tbsp chopped fresh basil
- 2 Tbsp chopped fresh cilantro
- 2 Tbsp chopped fresh mint
- Lime wedges, for serving (optional)
Instructions
- Heat the coconut oil in a large saute' pan. Add the chicken, onions, ginger, garlic, and red pepper flakes and cook, stirring occasionally, for 5 minutes, or until fragrant.
- Add the Worcestershire sauce, soy sauce, and Sriracha and cook for 3 more minutes, or until most of the liquid has been absorbed.
- Remove from the heat and stir in the lime juice. Serve the chicken mixture over the lettuce leaves and cauliflower rice and garnish with the fresh herbs. If desired, top with a few extra slices of onion and serve with lime wedges and Sriracha on the side.
