Chicken Minestrone with Pesto

Ingredients
- 1 28 oz can diced tomatoes in juice, undrained
- 4 c chicken broth
- 1 # boneless, skinless chicken thigh, cut in chunks
- 1 medium baking potato, peeled and diced
- 1/2 c onion
- 1/2 c carrot
- 1/2 c celery
- 1/4 tsp pepper
- 1 16 oz. can cannellini beans, rinsed
- 1 medium zucchini (about 6 oz.) diced
- 1 c frozen cut green beans, thawed
- 1/3 c prepared refrigerated basil pesto
Instructions
- Mix all ingredients except the cannellini beans, zucchini, green beans in a 4 qt. or more slow cooker.
- Cover and cook on low 7-9 hours until chicken is cooked through and veggies are tender.
- Stir in cannellini beans, zucchini, green beans. Cover and cook on high for 15 minutes or until zucchini is tender.
