Chicken & Rice Soup

Ingredients
- 10 c chicken broth
- 1 lg. onion, chopped
- 1 c sliced celery
- 1 c sliced carrots
- 1/4 c snipped parsley
- 1/2 tsp black pepper
- 1/2 tsp dried thyme leaves
- 1 bay leaf
- 1 1/2 c chicken cubed (3/4#)
- 2 Tbl lime juice
- 2 c cooked brown rice
- lime slices
Instructions
- Combine broth, onion, celery, carrots, parsley, pepper, thyme & bay leaf
- Bring to boil, stir once or twice. Reduce heat and simmer 10-15 minutes.
- Add chicken.
- Simmer uncovered for 5-10 minutes or until chicken is cooked.
- Remove and discard bay leaf.
- Stir in rice and lime just before serving.
- Garnish.
