Ingredients
- 5 Boneless Chicken Breast Halves (cooked)
- 6 Cups Chicken Broth
- 1 Onion (chopped)
- 1 Red Bell Pepper (chopped)
- 1 Green Bell Pepper (chopped)
- 6 Garlic Cloves (minced)
- 1/2 Cup Chopped Fresh Cilantro
- Olive Oil
- 1 Can Black Beans
- 1 Can Kidney Beans
- 1 Can Whole Kernel Corn
- 1 28oz Can Diced Tomatoes
- 2 tbsp Ground Cumin
- 1 tbsp Chili Powder
- 1 tsp Salt
- 1/2 tsp Ground Cayenne Pepper
Instructions
- Pre-cook Chicken
- Heat Oil in Large Stock Pot
- Add Garlic, Cilantro, Onion, and Bell Peppers. Saute for 2-3 Minutes
- Stir in Tomatoes and bring to Boil
- Add Cumin, Chili Powder, and Chicken Stock and return to Boil
- Add Salt and Cayenne and Reduce Heat to Medium
- Simmer for 30 Minutes
- Add Chicken, Beans, and Corn
- Heat Through and Serve
