Ingredients
- 2 pounds boneless beef chuck, trimmed and cut into 1-inch cubes
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 Tbsp avocado oil or other light-tasting oil
- 1/2 cup chopped yellow onions
- 1 Tbsp minced garlic
- 3 cups beef broth, store-bought or homemade (page 82)
- 1 Tbsp chili powder
- 2 tsp ground cumin
- 1 tsp cayenne pepper
- 1 tsp dried oregano leaves
- 1 tsp ground coriander
- 1/4 tsp ground cinnamon
- 1/4 cup canned chipotles in adobo sauce
- 1 Tbsp apple cider vinegar
- 1 Tbsp coconut flouwer
Instructions
- Season the beef with the salt and pepper. Heat the oil in a large heavy-bottomed saucepan (make sure it has a lid) or a 4- or 6- quart Dutch oven over medium-high heat.
- Add the beef and brown on all sides, about 4 minutes. Remove the meat and set aside.
- Add the onions and garlic to the pan and cook for 5 minutes, or until browned and translucent. Add the meat back to the pan along with the broth, spices, and chipotles. Simmer, covered, until the meat is tender, about 2 hours.
- Stir in the vinegar. Remove about 1/4 cup of the sauce to a small bowl. Whisk the coconut flour into the bowl of sauce, then add the sauce back to the pot and stir well. Simmer, uncovered, for 5 more minutes, until the sauce has thickened. Taste and season with more salt and pepper, if desired.
