  1. Season the beef with the salt and pepper. Heat the oil in a large heavy-bottomed saucepan (make sure it has a lid) or a 4- or 6- quart Dutch oven over medium-high heat.
  2. Add the beef and brown on all sides, about 4 minutes. Remove the meat and set aside.
  3. Add the onions and garlic to the pan and cook for 5 minutes, or until browned and translucent. Add the meat back to the pan along with the broth, spices, and chipotles. Simmer, covered, until the meat is tender, about 2 hours.
  4. Stir in the vinegar. Remove about 1/4 cup of the sauce to a small bowl. Whisk the coconut flour into the bowl of sauce, then add the sauce back to the pot and stir well. Simmer, uncovered, for 5 more minutes, until the sauce has thickened. Taste and season with more salt and pepper, if desired.
