Chipotle Cheese Polenta

Ingredients
- 4 c chicken broth
- 1 (8 oz.) bag Mexican blend shredded cheese
- 1 minced chipotle pepper plus 1 tsp. adobo sauce from can
- 1 c polenta
- 1 (4 oz.) can diced green chilies
- 1/3 c sliced green onions (green tops only)
Instructions
- Spray 13 x 9" baking dish with nonstick cooking spray.
- Bring broth to boil in a large saucepan; add polenta and cook for 10 to 15 minutes over low heat.
- Stir in cheese, chilies, chipotle pepper, adobo sauce and green onions. Spread in prepared dish; chill for at least 2 hours.
- When firm, cut into 1" squares.
- Doll it up by garnishing with guacamole, diced tomatoes and cilantro.
