Chunky Berry and Artichoke Salsa

Ingredients
- 2 cups marinated artichoke hearts, drained and coarsely chopped
- 1 cup strawberries, chopped
- 1 cup blueberries
- 1/2 cup cherry tomatoes, chopped
- 2 Tbsp red onion, finely diced
- 1 small garlic clove, minced (or 1 tsp minced garlic)
- 2 Tbsp cilantro, coarsely chopped
- 1 tsp smoked paprika
- Pinch of salt and black pepper, to taste
Instructions
- In a medium bowl, gently mix all ingredients until combined. Serve at room temperature or chilled, to accompany tortilla or pita chips, or use as a topping on baked or grilled fish, chicken breasts, beef or pork loin and/or baked potatoes.
- Store leftover salsa in a covered container, refrigerated, up to 5 days, or freeze in an airtight container or freezer bag for up to 2 months.
- Makes 8 (1/2 cup) servings.
