Cinnamon Imperial Apple Pie Cookies

Ingredients
- 2 3/4 cups (399 grams) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup (8 ounces) softened butter
- 1 1/4 (250 grams) cups sugar
- 1/4 cup (50 grams) light brown sugar
- 2 eggs
- 1 tsp pure vanilla extract
- 1 cup dried apples, cut into small pieces
- 1 cup Brach's Cinnamon imperials
- 3 additional Tbsp sugar
Instructions
- Preheat oven to 350*F and prepare a cookie sheet with parchment paper.
- In a bowl, mix together dry ingredients - flour, baking powder & salt. Set aside.
- Blend together butter, sugar, and brown sugar. Add vanilla extract and eggs. Scrape down sides of the bowl as necessary.
- Gradually add dry ingredients and mix until just blended.
- Fold Brach's Cinnamon Imperials and dried apples into dough.
- Put the extra 3 Tbsp of sugar in a bowl.
- Make balls out of the dough by measuring out approximately 1 1/2 Tbsp and rolling quickly in your hands. Then roll in sugar and place on prepared cookie sheets. Then roll in sugar and place on prepared cookie sheet.
- Bake for 8-10 minutes until cookies are puffy and have just started browning on edges.
- Wait 5 minutes and then transfer the cookies to a baking rack to cool.
