Ingredients

- 1 cup (2 sticks) butter, softened
- 3 Tbsp chopped fresh parsley
- 4 tsp minced garlic
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
- (makes 1 1/4 cups)
- 1 cup (2 sticks) butter, softened
- 2 Tbsp chopped sun-dried tomatoes
- 1/2 tsp kosher salt
- 1/2 tsp minced garlic
- 1/4 tsp ground black pepper
- (makes 3/4 cup)
- 1/2 cup (1 stick) butter, softened
- 2 ounces Gorgonzola cheese, crumbled
- 1 Tbsp minced fresh parsley
- 1 tsp minced garlic
Instructions
- Place all of the ingredients in a medium-sized bowl and mix thoroughly with a rubber spatula. Place a 12 by 15-inch length of plastic wrap on a cutting board.
- Spoon the butter mixture into a line approximately 10 inches long in the center of the plastic wrap. Roll up tightly and twist the ends, forming the butter into a log about 10 inches long and 2 inches in diameter. chill in the refrigerator for 1 hour.
- Unwrap the butter log and slide into 1/2-inch-thick rounds. Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
