Corn-And-Edamame Succotash

Ingredients
- 1 pkg (12 oz.) shelled edamame (about 2 c.)
- 1/2 c diced carrots
- 1/2 c diced red peppers
- 1 small onion, minced
- 1 T. olive oil
- 2/3 c diced cooked ham
- 1/2 c cooked corn
- 1 t. chopped garlic
- 1 T. chopped fresh chives
- 1 T. chopped fresh parsley
Instructions
- Cook Edamame according to package directions; set aside. In skillet over medium-low heat, cook carrots, red peppers, and onions in oil 6 minutes or until tender, stirring occasionally.
- Add ham, corn, garlic, chives, parsley, and cooked edamame. Cook 2 minutes or until heated through. Season with salt and pepper.
- Let ham and vegetable mixture cool 10 minutes or until room temperature, spoon onto lettuce-lined platter.
