  1. Cook Edamame according to package directions; set aside. In skillet over medium-low heat, cook carrots, red peppers, and onions in oil 6 minutes or until tender, stirring occasionally.
  2. Add ham, corn, garlic, chives, parsley, and cooked edamame. Cook 2 minutes or until heated through. Season with salt and pepper.
  3. Let ham and vegetable mixture cool 10 minutes or until room temperature, spoon onto lettuce-lined platter.
