Creamy Chive Potatoes

Ingredients
- 2 lbs baking potatoes, peeled and diced
- 1/2 small onion, chopped
- 1/2 c low-fat milk
- 1/2 c chicken broth
- 2 T. butter
- 1 T. chopped chives
Instructions
- In large pot over high heat, bring to a boil potatoes, onions and enough salted water to cover. Let simmer for 8 minutes or until potatoes are tender. Drain potatoes and onions; set aside.
- In same pot, over medium heat, cook next 3 ingredients 1 minute or until heated; remove from heat.
- Return potatoes and onions to pot. Using hand masher, mash potatoes, onions, and milk mixture until smooth. Stir in chives. Season with salt and pepper. Garnish with chives.
