Ingredients
- 4 hot 7oz baked russet potatoes, cut in half lengthwise
- 2 c frozen mixed vegetables (broccoli, red peppers, mushrooms, and onions)
- 2 Tbsp water
- 1 c diced lean ham
- 3/4 c light sour cream
- 1 Tbsp Dijon-style mustard
Instructions
- In a 2qt microwave wave container combine vegetables and water; microwave, covered with a vented cover, for 5 minutes.
- Drain vegetables well. Add ham; microwave, covered, 2 minutes longer, until heated throughout.
- Stir in sour cream and mustard; spoon over potatoes.
