Crunchy Green Bean Bake

Ingredients
- 1 lb green beans
- 1/2 c whole-wheat bread crumbs
- 1 T chopped fresh parsley
- 2 T olive oil, divided
- 1 small red pepper, sliced
- 1 onion, chopped
- 1 t chopped garlic
- 1/4 c chicken broth
- 1 T lemon juice
Instructions
- Heat oven to 350 degrees. Over high heat, bring large pot of salted water to a boil. Add green beans. Cook 3 minutes or until crisp-tender. Drain.
- In bowl, gently toss whole-wheat bread crumbs and parsley with 1 T olive oil; set aside.
- In skillet over medium heat, cook red peppers and onions in 1 T olive oil 2 minutes or until crisp-tender, stirring. Add chopped garlic. Cook 30 seconds. Remove from heat.
- Stir in chicken broth, lemon juice and green beans. Season with salt and pepper. Spoon bean mixture into casserole dish.
- Sprinkle bread crumb mixture over bean mixture. Bake 10 minutes or unitl heated through and bread crumbs are golden brown.
