Cucumber, Tomatoes, Onion, Avocado & Balsamic Vinegar

Ingredients
- 3 Persian cucumbers
- 1 c diced tomatoes or cherry tomatoes
- 1/4 c thinly diagonally sliced green onion or thinly sliced sweet onion
- 1 avocado
- 2 tsp lemon juice
- 1 Tbsp good quality balsamic vinegar
- Salt and pepper to taste
Instructions
- Cut cucumbers in half lengthwise, slice in half moon slices.
- Dice tomatoes or cut cherry tomatoes in half to make 1 cut.
- Diagonally slice green onions to make 1/4 c.
- Peel and cut avocado into small cubes.
- Combine veggies and gently toss. Add Balsamic vinegar, enough to barely coat veggies and toss again. Salt and pepper to taste.
- ** Toss avocado with tsp. of lemon juice to keep from browning.
