BUILD in glass starting with the Strawberry purée. Combine ingredients in order and top with Prosecco.
GARNISH with a heart-shaped orange twist. For a little dazzle, add in some edible glitter.
MIXOLOGIST'S TIP: We add the strawberry to this cocktail to both play with the rhubarb in the Aperol and to combat some of the bitterness known to accompany the Italian liquor. This cocktail is giving us an early thrust into the embrace of summer but the Aperol Spritz tends to be ordered year-round.
