Curried Cauliflower Soup

Ingredients
- 4 cups cauliflower florets, chopped
- 2 cups zucchini, shredded
- 1 1/2 cups onions, halved and sliced
- 4 cups vegetable broth
- 2 cups water
- 1 tbsp olive oil
- 1 tsp curry powder
- 1/2 tsp salt
Instructions
- Heat oil in a 4-5 quart pot over medium heat.
- Add onions and curry powder, cover, and cook 4
- minutes.
- Add cauliflower, broth, water and salt and bring to a
- simmer, stirring occasionally.
- Cover pot and let simmer 15 minutes, stirring
- occasionally.
- Purée soup in a blender or food processor.
- Return soup to pot and stir in all but 2 tbsp. zucchini.
