    Grind the Sichuan peppercorns

  1. If using the Sichuan peppercorns, grind them up with a mortar and pestle
  2. Cook the Noodles

  3. Cook noodles according to package
  4. Cook the Pork

  5. Heat the vegetable oil in a large skillet set over medium heat
  6. Add pork, breaking it up into small bits, about 8 minutes
  7. Once the pork is nearly cooked through add fresh ginger and garlic and cook until fragrant (about 1 minute)
  8. Add the Sauce

  9. Stir in the soy sauce, sherry, chicken stock, cinnamon, ground Sichuan peppercorns, sugar and chili paste
  10. Bring to a simmer and allow to cook until sauce thickens, about 5-7 mins
  11. Serve

  12. Spoon equal amounts of pork sauce over cooked noodles and garnish with peanuts and scallions.
