Ingredients
- 2 T. Olive Oil
- 2 c onion, chopped
- 2 T. freshly minced garlic
- 1 c sliced carrots
- 1 c sliced celery
- 2 28oz. cans of Progresso Italian Plum Tomatoes (or fresh tomatoes if you have them)
- 10 c homemade chicken stock
- 1 T. chopped frsh parsley
- 2 c sliced fresh green beans
- 2 t. basil
- 1 t. oregano
- 1/2 t. cayenne pepper flakes
- 1 15oz. can low-salt kidney beans
- 1 15oz. can low-salt garbanzo beans
- 1/2 small cabbage, shredded
- 2 med. zucchini, quartered and sliced
- 3/4 cup elbow or small shell macaroni
- 4 links Italian sausage, cooked, quartered and sliced
Instructions
- In a large soup pot, sauté onions, garlic, carrots, and celery in olive oil until translucent.
- Add tomatoes, stock, parsley, green beans, basil, oregano, and cayenne. Bring to a boil, reduce heat, cover and simmer 20 minutes.
- Add kidney beans, garbanzo beans, and cabbage. Simmer covered 10 minutes.
- Add zucchini, macaroni, and sausage and cook uncovered 20 minutes or until macaroni is cooked.
- Serve with freshly grated Parmesan cheese, if desired. This only needs crusty bread to make a meal!
