  1. Stir-fry chopped chicken in the sesame oil for 2-3 minutes. Add the garlic, bean sprouts, spinach, green onions, and water chestnuts. Stir-fry for 4-5 minutes longer.
  2. Combine soy sauce and cornstarch. Stir into chicken mixture.
  3. Stir in grated ginger root, sugar and salt. Keep stirring until mixture is thickened.
  4. Remove from heat and let cool.
  5. Place 1/4 c. of filling on a wrapper.
  6. Fold one corner towards the center over the filling. Fold the side corners in to form an evenlope that holds the mixture in.
  7. Roll up jellyroll style.
  8. Heat the oil to 360*. Deep-fry a few egg rolls at a time for 3-4 minutes or until golden.
  9. Drain well on paper towels before serving.
