  1. Bring a large pot of salted water to a rolling boil over high heat.
  2. Add pasta and cook according to package instructions, but remove pasta and reserve 1/4 cup of pasta water with 1 minute of cooking time remaining.
  3. Drain noodles and set aside.
  4. Meanwhile, heat a medium skillet over medium-high heat.
  5. Add olive oil, garlic, tomatoes and reserved pasta water.
  6. Season with salt, pepper, and crushed red pepper flakes, if using.
  7. Bring to a strong simmer to combine flavors and soften tomatoes.
  8. Toss pasta with tomatoes and sauce.
  9. Serve immediately, with Parmesan cheese, if desired.
  10. Makes 4 to 6 servings.
