Fresh Tomato Pasta

Ingredients
- 1 lb long pasta noodles, such as spaghetti, linguine or fettuccine
- 2 Tbsp olive oil
- 3 garlic cloves, minced or finely grated
- 4 cups Houweling's Grape Tomatoes, halved
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp crushed red pepper flakes, optional
- Finely grated Parmesan cheese, optional
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- Add pasta and cook according to package instructions, but remove pasta and reserve 1/4 cup of pasta water with 1 minute of cooking time remaining.
- Drain noodles and set aside.
- Meanwhile, heat a medium skillet over medium-high heat.
- Add olive oil, garlic, tomatoes and reserved pasta water.
- Season with salt, pepper, and crushed red pepper flakes, if using.
- Bring to a strong simmer to combine flavors and soften tomatoes.
- Toss pasta with tomatoes and sauce.
- Serve immediately, with Parmesan cheese, if desired.
- Makes 4 to 6 servings.
