Garlic Butter Shrimp Scampi

Ingredients
- 1 Tbsp plus 1 1/4 tsp fine seat salt, divided
- 4 Tbsp olive oil, divided
- 1/2 # spaghetti, uncooked
- 3 Tbsp unsalted butter, divided
- 1 # asparagus, trimmed and cut into 2" pieces
- 1/8 tsp plus 1/4 tsp ground black pepper, divided, or to taste
- 4 garlic cloves, minced
- 1/4 tsp red pepper flakes, or to taste
- 1 # large shrimp, peeled and deveined
- 1 Tbsp lemon zest, grated
- 1/4 cup lemon juice, freshly squeezed
- 1/3 cup fresh parsley, finely chopped
- Parmesan cheese, freshly grated
Instructions
- Boil a large pot of water. Add 1 Tbsp salt and 1 Tbsp olive oil. Cook pasta according to package directions.
- Drain pasta, return to pot and cover.
- Place a deep pan over medium-high heat and add 1 Tbsp olive oil and 1 Tbsp butter.
- Add asparagus, 1/4 tsp salt and 1/8 tsp black pepper.
- Cook for 5 minutes, or until crisp-tender, stirring occasionally.
- Remove from pan. Add 2 Tbsp olive oil and 2 Tbsp butter to the pan.
- Once butter is melted, add garlic and red pepper flakes.
- Cook for 1 minute, stirring frequently.
- Add shrimp in a single layer.
- Season with remaining 1 tsp salt and 1/4 tsp black pepper.
- Saute' for 1 minute per side, or until pink and opaque.
- Stir in lemon zest, lemon juice, and parsley.
- Turn off heat and add the pasta and asparagus.
- Toss to combine.
- Serve with cheese.
