  1. Preheat oven to 425.
  2. Peel shallots & garlic and place into tightly wrapped foil w/ 1 tablespoon of olive oil.
  3. Roast in the oven for 45 minutes.
  4. Unwrap foil carefully and cool. When cooled, squeeze the shallots and garlic separately, extracting the cooked meat out of each clove.
  5. Cut the potatoes into quarters.
  6. Boil a large pot of salted water and place potato pieces in the water. Boil for 20 to 30 minutes, depending on size. The potatoes should be fork-tender when done with this step.
  7. Drain water and return potatoes in pan to the stove.
  8. Over low heat, use a potato masher (or wooden spoon, or similar blunt object) to mash the potatoes by hand, adding the shallot and garlic meat as you go.
  9. Salt & Pepper to taste.
  10. Using electric mixer, blend in ½ of the milk and ½ of the butter.
  11. Taste test a spoonful. Add more salt & pepper if desired.
  12. If potatoes are too creamy, allow to cook for a few minutes. If they aren’t creamy enough, continue blending in the remainder of the butter and milk.
