Garlic Mashed Potatoes

- 2 LBs Potatoes (serves 4)
- 1 Stick of Butter
- 1 Cup of Milk
- Salt
- White Pepper
- 1 Shallot
- 1 Large heads of Garlic
- Olive Oil
Instructions
- Preheat oven to 425.
- Peel shallots & garlic and place into tightly wrapped foil w/ 1 tablespoon of olive oil.
- Roast in the oven for 45 minutes.
- Unwrap foil carefully and cool. When cooled, squeeze the shallots and garlic separately, extracting the cooked meat out of each clove.
- Cut the potatoes into quarters.
- Boil a large pot of salted water and place potato pieces in the water. Boil for 20 to 30 minutes, depending on size. The potatoes should be fork-tender when done with this step.
- Drain water and return potatoes in pan to the stove.
- Over low heat, use a potato masher (or wooden spoon, or similar blunt object) to mash the potatoes by hand, adding the shallot and garlic meat as you go.
- Salt & Pepper to taste.
- Using electric mixer, blend in ½ of the milk and ½ of the butter.
- Taste test a spoonful. Add more salt & pepper if desired.
- If potatoes are too creamy, allow to cook for a few minutes. If they aren’t creamy enough, continue blending in the remainder of the butter and milk.
