  1. Preheat oven to 425 F.
  2. Combine all ingredients except olive oil in a large mixing bowl. Mix until well combined. With damp hands, mold meat firmly around skewer into a sausage shape, about 5 inches long and 2 inches wide. You should have enough meat for about 10 skewers.
  3. Brush kebabs with oil and bake on a foil lined baking sheet for 25 to 33 minutes or until meat registers an internal temperature of 165 F.
  4. Serve with tzatziki sauce and hummus.
  5. Makes 5 servings.
