Hearty Italian Beef Soup

Ingredients
- 1 (1.3 lb) package Kirkland Signature Organic Ground Beef
- 1 cup onion, diced
- 1 garlic clove, minced
- 1 (14.5 oz) can organic diced tomatoes
- 1 1/2 Tbsp Better Than Bouillon Roasted Beef Base, dissolved in 1 qt hot water
- 2 cups carrots, sliced
- 2 tsp organic Italian seasoning
- 1 bay leaf
- 1 (15 oz) can white beans (such ass cannellini), drained and rinsed
- 2 cups fresh baby spinach, roughly chopped
- Salt to taste
- Red pepper flakes, optional
- 1/2 cup Parmigiano-Reggiano cheese, shredded
Instructions
- In a large spray-coated pot over medium heat, cook beef with onion, stirring occasionally to break up meat, until no pink color remains; drai any fat.
- Add garlic; cook and stir 1 minute.
- Stir in tomatoes, broth, carrots, Italian seasoning and bay leaf.
- Bring to a simmer; cook 10 minutes.
- Add beans and spinach; simmer just until carrots are soft and meat reaches an internal temperature at 160*F.
- Season, if desired.
- Remove bay leaf.
- To serve, ladle soup into bowls; sprinkle with cheese.
- Makes 6 to 8 servings.
