Hidden Veggie Mexican Lasagna

Ingredients
- 1 pkg (12oz.) ready-to-steam garlic cauliflower, like Birds Eye
- 1/2 c part-skim ricotta cheese
- 1 c shredded low-fat Mexican cheese blend, divided
- 1 lb ground turkey
- 1 pkg (.41oz.) quesadilla casserole seasoning, like McCormick Recipe Inspirations
- 1 T vegetable oil
- 1 can (14.5oz.) fire-roasted diced tomatoes, like Del Monte
- 2 T tomato paste
- 2 T chopped fresh cilantro
- 1 lb lasagna noodles, cooked
- 2 c shredded cabbage
- 2 c fresh salsa
Instructions
- Heat oven to 400 degrees. Cook cauliflower as package directs; drain. Mash cauliflower, ricotta cheese and 2/3 c shredded Mexican cheese blend
- In skillet over medium heat, cook turkey and seasoning in vegetable oil 10 minutes or until meat is browned. Add next 3 ingredients. Bring to a simmer.
- In greased 9"x13" pan, layer 1/3 noodles and 1/2 EACH cauliflower, cabbage, meat and salsa. Repeat layering. Top with remaining noodles. Cover; bake 15 minutes removing foil and topping with 1/3 c Mexican cheese after 10 minutes.
