  1. Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
  2. Mix softened butter with minced garlic, chopped rosemary, thyme, salt, and pepper.
  3. Rub the herb butter all over the chicken, including under the skin.
  4. Cut lemons in half. Stuff the cavity with lemon halves and quartered onion.
  5. Place chicken in a roasting pan. Drizzle with olive oil.
  6. Roast for 60 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before carving. Serve with pan juices.
