Ingredients
- 1 whole Whole chicken
- 2 whole Lemons
- 3 sprigs Fresh rosemary
- 4 sprigs Fresh thyme
- 6 cloves Garlic
- 3 tbsp Olive oil
- 2 tbsp Butter
- 2 tsp Salt
- 1 tsp Black pepper
- 1 large Onion
Instructions
- Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
- Mix softened butter with minced garlic, chopped rosemary, thyme, salt, and pepper.
- Rub the herb butter all over the chicken, including under the skin.
- Cut lemons in half. Stuff the cavity with lemon halves and quartered onion.
- Place chicken in a roasting pan. Drizzle with olive oil.
- Roast for 60 minutes, or until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before carving. Serve with pan juices.
