Mashed Potatoes

Ingredients
- 4 lbs Yukon Gold Potatoes
- 2 Sticks Butter
- 2 Cups Milk
- Salt & Pepper
- Olive Oil
Instructions
- Cut Potatoes into quarters
- Boil large pot of salted water for 20-30 minutes (to fork tender)
- Drain and return to stove
- Over low heat, mash with potato masher.
- With electric mixer, blend in 1/2 milk. 1/2 butter, salt, and pepper
- Test with spoon. If too creamy, cook longer. If not creamy enough, add more milk and butter.
