Mini Mixed Berry Pie

Ingredients
- 1 cup sugar
- 1/4 cup flour
- 1/4 tsp sea salt
- 5 cups frozen Kirkland Signature Three Berry Mix
- Juice of 1/2 lemon
- 2 Tbsp unsalted butter
- 2 (8-oz) pie crusts
- 1 egg, beaten
Instructions
- Preheat oven to 425*F.
- Whisk together dry ingredients. Place berries in a large mixing bowl. Slowly add dry ingredients, then gently toss to coat fruit evenly. Transfer mixture to a saucepan and cook over medium heat until fruit releases juice. Add lemon juice and butter. Combine, then let cool.
- Roll out pie crusts. Use 1 crust to create the bottom crust in three 5 x 1-inch ramekins. Top off the ramekins with the cooled berry mixture. Cut the second crust into strips. Top off the pies with a lattice crust. Combine egg with 1 Tbsp. of water. Brush the tops of the pies with the egg wash.
- Place the pies on a baking sheet; loosely cover with foil. Bake at 425*F for 15 minutes. Reduce to 350*F, remove foil and bake for 15 minutes, until the crust is golden and the filling bubbles. Remove from oven and let cool. Makes 3 to 6 servings.
