  1. Preheat oven to 425*F.
  2. Squeeze out excess water from spinach. Place spinach in a bowl; mix in onion, garlic, feta, pepper and 1 egg.
  3. Roll out pie crusts. Divide 1 crust to create the bottom crust in two 5 x 2-inch ramekins. Divide the spinach mixture between them.
  4. Use the second pie crust to top off the pies. Cut off any excess dough. Press the top and bottom crusts together around the edges and cut an X in the middle of each pie. Combine 1 egg with 1 Tbsp of water. Brush tops of teh pies with the egg wash.
  5. Place pies on a baking sheet; loosely cover with foil. Bake at 425*F for 15 minutes. Reduce to 250*F, remove foil and bake for 15 minutes, until crust is golden. Makes 2 to 4 servings.
