Ingredients
- 3 cups frozen spinach, thawed
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 6 oz crumbled feta
- 1/8 tsp black pepper
- 2 eggs, divided and beaten
- 2 (8-oz) pie crusts
Instructions
- Preheat oven to 425*F.
- Squeeze out excess water from spinach. Place spinach in a bowl; mix in onion, garlic, feta, pepper and 1 egg.
- Roll out pie crusts. Divide 1 crust to create the bottom crust in two 5 x 2-inch ramekins. Divide the spinach mixture between them.
- Use the second pie crust to top off the pies. Cut off any excess dough. Press the top and bottom crusts together around the edges and cut an X in the middle of each pie. Combine 1 egg with 1 Tbsp of water. Brush tops of teh pies with the egg wash.
- Place pies on a baking sheet; loosely cover with foil. Bake at 425*F for 15 minutes. Reduce to 250*F, remove foil and bake for 15 minutes, until crust is golden. Makes 2 to 4 servings.
