    For the Ramen Soup

  1. Mince the garlic, ginger, and shallot
  2. Grind the sesame seeds
  3. In a medium pot, heat the sesame oil over medium-low heat and add the minced garlic, ginger, and shallot
  4. Stir fry until fragrant
  5. Add the ground pork and increase heat to medium. Cook the meat until no longer pink
  6. Add the bean paste and miso. Quickly blend well with the meat before they get burnt
  7. Add the ground sesame seeds and sugar and mix well
  8. Add the sake and chicken stock and bring the mixture to a simmer
  9. Taste and add Salt/Pepper as needed
  10. Cover with the lid and keep the ramen soup simmering while you cook the noodles
  11. To Prepare the Ramen Eggs

  12. Boil eggs for 8 minutes
  13. Cool eggs in ice bath
  14. Peel eggs
  15. Add to marinade
  16. Shortly before serving, add eggs to broth
  17. To Prepare the Toppings and Ramen Noodles

  18. Bring a large pot of unsalted water to a boil
  19. When the water is boiling, ladle some hot water into the serving bowls to warm them up
  20. Meanwhile, gently shake the fresh noodles with your hand to separate and loosen them up
  21. Prepare the toppings ahead of time so you can serve the hot ramen immediately
  22. Cook the noodles according to the package instructions
  23. When the noodles are done, quickly pick them up with a mesh sieve and shake out the excess water
  24. Serve into warm bowls and add ramen soup & toppings immediately
