  1. Put yeast and salt into water, then stir to combine.
  2. Add flour and stir to combine. Be sure to scrape the sides to be sure it is fully combined.
  3. Once mostly incorporated, "tumble" the dough (bring top to bottom and vice versa).
  4. Cover with plastic wrap.
  5. Proof for 8-24 hours. Can proof on the kitchen counter. Can also turn on your oven to warm for 10 minutes, then turn off oven and leave the oven light on to proof your dough.
  6. Spray a cast iron skillet with no stick spray.
  7. Pull and stretch the dough.
  8. Roll the dough out into the skillet. Can also use a 9" metal pie plan.
  9. Cover with lint-free towel and proof for 30 - 60 minutes. (Cannot do in the oven, because you will need to pre-heat the oven for baking.)
  10. Move oven rack to lower third of the oven and preheat to 400*F.
  11. Bake at 400* for 40 minutes.
