Peanut Butter & Jelly (Or Kiss) Thumbprint Cookies

Ingredients
- 1/2 c peanut butter
- 1/2 c unsalted butter, softened
- 1 egg
- 1/2 c granulated sugar & extra for rolling
- 1/2 tsp baking powder
- 1/2 c packed brown sugar
- 3/4 tsp baking soda
- 1 1/2 c all-purpose flour
- Strawberry jelly or Hershey's Kisses
Instructions
- Preheat oven to 375*
- Beat sugars, peanut butter, butter, and egg until well-blended.
- Stir in flour, baking soda, and baking powder.
- Shape into 1" balls and roll in additional sugar.
- Place 2" apart on ungreased cookie sheet.
- Bake 8-10 minutes or until edges are light golden brown.
- Immediately press a Hershey's Kiss or press thumb into center of each cookie.
- Add jelly to center of cookies, if doing PB&J.
- Move cookies to cooling rack.
- Nom Nom Nom.
