Peanut Chicken

Ingredients
- 1 Tbsp coconut oil
- 1 1/2 lb chicken breast, cut into 1" cubes, sprinkled with a pinch of salt
- 3 large garlic cloves, roughly chopped
- 1 Tbsp lemongrass, chopped
- 1 Tbsp chopped fresh ginger or ginger paste
- 1 (13 oz) can full-fat coconut milk
- 3 Tbsp soy sauce (or use gluten-free liquid amino acids)
- 3 Tbsp honey, coconut sugar or brown sugar
- 2 Tbsp fresh lime juice, or to taste
- 4 to 5 kaffir lime leaves (optional)
- 1 Tbsp chile garlic paste, Sriracha sauce or sambal oelek
- 1/2 cup Peanut Butter
- Handful of baby spinach leaves or rice for serving
Instructions
- In a large skillet or Dutch oven, heat coconut oil over medium heat. Add the chicken cubes and sauté until golden.
- Add the garlic, lemongrass, ginger; saute until fragrant, 1 to 2 minutes, then add all remaining ingredients except the peanut butter and spinach or rice, and stir to combine.
- Cover and simmer very gently on low heat for 8 to 10 minutes or until chicken is cooked throughout, then stir in the peanut butter.
- Taste, and adjust salt, lime, and heat to your preference.
- Serve the chicken over a bed of baby spinach on rice. Makes 4 to 6 servings.
