  1. In a large skillet or Dutch oven, heat coconut oil over medium heat. Add the chicken cubes and sauté until golden.
  2. Add the garlic, lemongrass, ginger; saute until fragrant, 1 to 2 minutes, then add all remaining ingredients except the peanut butter and spinach or rice, and stir to combine.
  3. Cover and simmer very gently on low heat for 8 to 10 minutes or until chicken is cooked throughout, then stir in the peanut butter.
  4. Taste, and adjust salt, lime, and heat to your preference.
  5. Serve the chicken over a bed of baby spinach on rice. Makes 4 to 6 servings.
