Pick de Gallo Burger

Ingredients
- 1 medium onion, chopped
- 1 medium tomato, finely chopped
- 1/4 cup cilantro, chopped
- 3 Tbsp lime juice, divided
- 1 small jalapeño, minced
- 1/4 cup mayonnaise
- 1/2 tsp Ground black pepper
- 3 Tbsp butter, divided
- 4 burger buns
- 3 Tbsp canola oil
- 4 burger patties
- 4 lettuce leaves, rinsed
- 1 large avocado , pitted, peeled, and thinly sliced
Instructions
- Combine the chopped onion, tomato, and cilantro in a bowl. Add 2 Tbsp of lime juice and jalapeño to the bowl. Mix and set aside.
- In a separate bowl, thoroughly mix the mayonnaise, the remaining 1 Tbsp of lime juice and black pepper.
- Heat a large skillet or pan over medium heat. Immediately add half the butter, melting it over the full surface.
- Place burger bun bottoms, cut side down, in the pan and toast until golden brown; repeat procedure with top buns. Set buns aside and wipe out pan.
- Pour canola oil into the pan and warm over medium-high heat. After 1 minute, add burgers to hot pan. Cook burgers on each side, until they reach an internal temperature of 160*F.
- Spread the toasted side of the bottom buns with the lime-pepper Mayo. Add a lettuce leaf, then place a burger on each bun. Top with avocado slices and pico de Gallo. Cover with top bun.
