    Pico de Gallo

  1. Combine the chopped onion, tomato, and cilantro in a bowl. Add 2 Tbsp of lime juice and jalapeño to the bowl. Mix and set aside.
  2. Burger

  3. In a separate bowl, thoroughly mix the mayonnaise, the remaining 1 Tbsp of lime juice and black pepper.
  4. Heat a large skillet or pan over medium heat. Immediately add half the butter, melting it over the full surface.
  5. Place burger bun bottoms, cut side down, in the pan and toast until golden brown; repeat procedure with top buns. Set buns aside and wipe out pan.
  6. Pour canola oil into the pan and warm over medium-high heat. After 1 minute, add burgers to hot pan. Cook burgers on each side, until they reach an internal temperature of 160*F.
  7. Spread the toasted side of the bottom buns with the lime-pepper Mayo. Add a lettuce leaf, then place a burger on each bun. Top with avocado slices and pico de Gallo. Cover with top bun.
