Pomegranate and Fruit Chutney

Ingredients
- 1 cup pomegranate juice
- 1/2 cup dried cranberries, chopped
- 1/2 cup dried cherries, apples or apricots, chopped
- 1/3 cup raisins
- 1/2 cup onion, finely chopped
- 1/2 cup sugar
- 2 tsp orange peel, shredded
- 1 tsp cornstarch
- 1/2 cup pistachios, shelled and chopped
- 1/3 cup pomegranate arils
Instructions
- In a medium saucepan, combine the juice, cranberries, cherries, raisins, onion, sugar, orange peel and cornstarch until well-blended.
- Bring mixture to a boil over high heat; reduce to medium-low heat and simmer, uncovered, for 5 minutes, stirring occasionally.
- Remove from heat; stir in pistachios and arils.
- Cool 15 minutes.
- If not using right away, pour into a tightly covered container and refrigerate for up to 2 weeks.
- Makes 8 to 10 servings.
