    Cook the Noodles

  1. Boil the noodles according to package instructions, drain and rinse with cold water.
  2. Spread the noodles on a double thickness of paper towels and blot with a handful of paper towels.
  3. Return the noodles to the cooking pot and toss with oil.
  4. Cover with lid and reserve.
  5. Make the Sauce

  6. In a small dish, whisk together the Worcestershire sauce, ketchup, honey, sake (if using) and white pepper.
  7. Set aside.
  8. Stir-Fry the Yakisoba

  9. In a large pan, heat oil over medium heat
  10. Add the pork and cook 1-2 minutes.
  11. Add the onions, garlic, carrots and stir-fry until the vegetables begin to wilt.
  12. Give the pot of noodles a stir to loosen them up and add them to the vegetables.
  13. Drizzle the sauce over the noodles and toss with the vegetables until the noodles are heated and coated with the sauce.
  14. Divide equally into 4 serving dishes and garnish with the pickled ginger and snipped chives.
