Potato Soup

Ingredients
- 1.5 tsp. olive oil
- 1/2 c chopped onion
- 1/2 c chopped carrots
- 3 chopped green onions
- 1/2 c milk
- 1 stalk celery, chopped
- 4 c vegetable broth
- 4 c cubed potatoes
- 1/8 tsp cayenne pepper
- 1/2 c shredded cheddar cheese
- 1/2 tsp kosher salt
Instructions
- Prepare vegetables. Add olive oil to the sauce pan and add onion, carrot and celery as they are cut up. Saute until the onion is soft, but not brown - about 3-4 minutes.
- Stir in vegetable broth, milk, potatoes and pepper; bring to boil, reduce heat, and simmer, covered, until the potatoes are tender - about 10-15 minutes.
- Stir in cheese, heating just until melted - do not boil. Adjust seasoning to taste by adding salt, if desired. Serve at once.
