Ingredients
- 1/4 cup peppers, chopped
- 1/4 cup zucchini, chopped
- 2 T onion, sliced
- 5 Egg Whites (or 1/2 cup egg substitute)
- 1/4 cup white or black beans
- 1 Whole Wheat Tortilla
- 2 T mozzarella and prepared salsa
Instructions
- Saute peppers, zucchini, and onions.
- Add egg whites and cook 1 minute or until eggs are set, stirring.
- Add beans.
- Spoon egg mixture over tortilla.
- Top with mozzarella and salsa, roll up and serve.
