  1. Crumble your red velvet cake into a fine crumb.
  2. Add in 6 oz of cream cheese and 1/2 cup melted white chocolate, and mix well.
  3. Roll 1″ balls of the crumb mixture between the palms of your hands. Repeat with remaining mix and chill the truffles for 30 minutes.
  4. Using a fork, dip each truffle in 16 oz of melted dark chocolate and place on parchment paper. Drizzle the chocolate covered truffles with melted white chocolate and chill to set.
