Ingredients
- 2 3/4 c (330g) all-purpose flour
- 1 t baking soda
- 1/2 t fine salt
- 1/2 c shortening
- 8 T (1 stick) unsalted butter, softened
- 1 1/2 c (300g) sugar, plus 3 Tbsp (38g)
- 2 large eggs
- 1 T ground cinnamon
Instructions
- Pre-heat oven to 350 degrees
- Sift flour, baking soda and salt into a bowl.
- Beat together shortening and butter. Add the 1.5 c of sugar and continue beating until light and fluffy, about 5 minutes.
- Add the eggs, one at a time, beating well after each addition.
- Add the flour mixture and blend until smooth.
- Mix the 3 T sugar with cinnamon in a small bowl. Roll the dough, by hand, in 1 1/2" balls. Roll the balls in the cinnamon sugar. Flatten the balls into 1/2" thick disks.
- Bake about 12 minutes.
