  1. Preheat oven to 275 degrees F.
  2. Measure out two cups of whole almonds and set aside. Meanwhile, heat oil in a cast-iron skillet and add all the spices besides the salt and citric acid (if using). Heat for a few minutes or until aromatic.
  3. Add almonds and cook over medium heat for a few minutes then roast in the oven for 15 minutes.
  4. Sprinkle the almonds with salt and citric acid. Allow to cool then enjoy!
