Teriyaki Chicken Stir-Fry

Ingredients
- 1 lb boneless skinless chicken, sliced
- 1/3 c teriyaki marinade
- 2 bell peppers, sliced
- 1 T vegetable oil
- 1 c sliced shiitake mushrooms or button mushrooms
- 1 c snow peas, halved
- 1/2 c sliced scallions
- 1 T chopped fresh ginger
- 1 clove garlic, chopped
- 1/2 c low-sodum chicken broth
- 2 cups hot cooked rice
Instructions
- In large bowl, toss chicken with teriyaki marinade. Cover; let marinate 30 minutes. Remove chicken from marinade, reserving used marinade.
- In skillet over medium-high heat, cook peppers in oil 2 minutes or until peppers are tender, stirring often.
- Add mushrooms, snow peas, scallions, ginger and garlic. Cook 2 minutes. Remove vegetables from skillet.
- In same skillet over medium heat, cook chicken 5 minutes or until done, stirring occasionally. Add vegetable mixture, chicken broth and reserved teriyaki marinade. Bring mixture to a boil. Cook 1 minute. Serve chicken stir-fry over hot cooked rice.
